Yummy Salsa Recipe
This Salsa Recipe is absolutely the best one I have ever made. The original recipe was shared with me by my friend Jamie over at I Heart Naptime. She found it originally from the Pioneer Woman. I have been using it for a couple of years now and after some tweaking and removing/adding ingredients it is now my “go to” salsa recipe that I never, ever tire of. Every time I make it for someone, they just can’t stop eating it.
If you are going to whip some of this up, be sure to have at least a couple bags of tortilla chips on hand. You will need them! I recommend On the Border, they are absolutely, by far, my favorite brand of tortilla chip!! Hands down, the best.
This salsa recipe is super duper easy to make, and I almost always have every ingredient on hand. No weird ingredient list, just normal every day use items. That is my kind of recipe! I always have such a hard time when I am trying to make new foods and the directions call for all kinds of ingredients that I do not have, and sometime don’t even know what they are!!! One time I was going to try and make authentic mexican black beans and the recipe called for “epazote”….what the heck is that! After googling it, and figuring out it was a type of herb, I decided I could just use canned beans instead. Much less hassle.
There have been times I have spent more money trying to make a food, than it would have cost me to just buy the food already made at the store, yikes! So, YES, I like recipes that have easy ingredients that I can easily FIND at the grocery store or already have in my home.
This salsa recipes definitely fits that bill. It does make a pretty large amount, but it lasts in my fridge for at least a week. Of course it always tastes a bit better at the beginning of the week than at the end(wink). But it still works great in mexican casseroles, or taco/burrito dishes.
I hope you enjoy it as much as my family and friends and I do!
- 2 cans mild Rotel
- 1 can diced tomatoes
- 3/4 to 1 bunch cilantro
- 1/2 small onion
- 2 TBS lime juice
- 1/4 tsp cumin
- 1/4 tsp salt
- 1 tsp sugar
- Put all ingredients into a blender or food processor. Blend them up until you reach your desired consistency. I like mine very well blended, no chunks for me!
