Beef Enchiladas and Mexican Rice
Mexican food is at the top of my food favorites list. This Beef Enchilada recipe is amazing! It is not a hard recipe to follow, but it definitely has a few steps involved. But…..I hope you will believe me when I say it is totally worth any effort you exert in the making of this meal. 🙂
They are full of flavor, not dry and are so great smeared with sour cream and avocado and salsa. I have tried many a enchilada recipe and this one is the best. The Pioneer Woman’s Enchiladas
These enchiladas are perfect. I know it might be a bit lame-o to just share a recipe of someone else’s, but these are so yummy I just have to tell you about them. Make a batch for your family, for your friends, or when you are bringing dinner to someone in need. They will thank you, and rave about your cooking, I promise! {wink}
And if you need a side dish, a partner on the plate for those delicious enchiladas, there is nothing better than this mexican rice. It is moist, not spicy, and is a perfect pairing for most any mexican main dish.
 Enjoy!!
- 3 Tablespoons Vegetable Oil
- 1 cup rice (long grain)
- 1 1/2 tsp garlic salt
- 1/2 tsp ground cumin
- 1/3 cup chopped onion
- 1 small can tomato sauce
- 2 cups chicken broth
- Heat oil in large saucepan over medium heat
- Add rice and stir until puffy and golden brown
- Sprinkle rice with garlic salt and cumin while cooking
- Add chopped onions, stir until tender
- Pour in tomato sauce and chicken broth, bring to a boil
- Turn heat to low, cover pan and simmer for 20 to 25 min.
- Fluff with fork and serve
